Coffee Brownies
2 tablespoons of instant coffee
3oz unsweetened chocolate
½ cup or 1 stick (4oz) butter
½ cup (2oz) all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
7oz granulated sugar
2 eggs
1 teaspoon vanilla extract
4oz chopped pecans
Begin by buttering and flouring an 8 inch x 8 inch cake pan, or
alternatively line the sides and base of the pan with parchment
paper or foil. Then preheat the oven to 350°F.
Now, break the eggs into a bowl; add the sugar and the vanilla
extract and beat together. Then sift the flour and the baking powder
into another bowl and add the salt.
After this break the chocolate into pieces and put these together
with the butter and the instant coffee into a heavy-based saucepan.
Heat gently and stir until the chocolate and butter are melted and
the mixture is smooth.
Then remove the pan from the heat and allow to cool a little before
adding the beaten egg and sugar mixture. Beat well. Now add the
sifted ingredients and stir well to mix. Then add the pecans and
stir again.
Pour the brownie mixture into the prepared pan and bake for about
25 minutes or until the coffee brownie begins to shrink from the
sides of the pan but the middle is still squidgy. Leave to cool
in the pan, before cutting into squares.
