Hazelnut Brownies
½ cup (2oz) flour
½ cup or 1 stick (4oz) butter
7oz superfine sugar
4oz unsweetened chocolate
2 eggs
3oz chopped hazelnuts (filberts)
Pinch of salt
1 teaspoon of vanilla extract
½ teaspoon of baking powder
First line the sides and base of an 8 inch x 8 inch shallow cake
pan with foil or parchment paper or alternatively grease and flour
the pan; then preheat the oven to 350°F.
Now break the eggs into a bowl and add the vanilla extract and
the sugar and beat together. In a second bowl sift together the
flour and baking powder and add the salt.
Next break the chocolate into bits and put the pieces into a heavy-based
saucepan together with the butter. Heat gently until melted.
Then remove the saucepan from the heat and let the melted chocolate
and butter cool a little before mixing in the egg and sugar mixture.
Now add the flour and the hazelnuts and mix everything together
well.
Put this deliciously chocolaty and nutty brownie mixture into the
prepared pan and spread the mixture out evenly. Bake for about 25
to 30 minutes. When done the hazelnut brownie should just be starting
to shrink from the sides of the pan but the center should still
be soft and squidgy.
Remove from the oven and leave the brownie in the pan, to cool,
for about 10 minutes before cutting into squares. Delicious.
