Cocoa Cookies
2 cups (8oz) of flour
3 level teaspoons of baking powder
2 level tablespoons of sugar
4 level tablespoons of cocoa
½ a teaspoon of salt
2 level tablespoons of butter
About ? of a cup of milk
you will also need
A baking sheet or 2
Parchment paper (optional)
The butter for this recipe should be soft so you may need to take
it out of the refrigerator several hours or even the night before
baking.
Then when you’re ready to begin, grease or line a baking
sheet with parchment paper and preheat the oven to 425°F.
Next, sift the flour into a large bowl followed by the baking powder,
cocoa and salt. Then with your thumbs and fingertips rub the butter
into the dry ingredients until the mixture resembles breadcrumbs.
Now stir in just enough milk to make a firm but not stiff dough.
Turn the dough out onto a suitable surface or board lightly sprinkled
with flour and roll out to the required thickness then, dipping
the cookie cutter into flour as you go, cut into rounds. Place the
cookies on the prepared baking sheet and bake for 10 -15 minutes.
