Honey-Choc Cookies
This recipe will make about 20 Honey-Choc Cookies.
2 tablespoons clear honey
4oz chocolate chips
2 cups (8oz) all-purpose flour
4oz soft brown sugar
8 tablespoons (4oz) soft margarine or butter
you will also need
A baking sheet or 2
Parchment paper (optional)
If you are using margarine in this recipe this should ideally be
taken from the refrigerator about an hour or so before baking. If
on the other hand if you’re using butter this should be soft
so you may need to leave it out of the refrigerator for several
hours or even overnight.
Then when you’re ready to begin, line with parchment paper
or grease a baking sheet and preheat the oven to 350°F.
Next put the margarine or butter and the sugar into a bowl and
cream (beat) together until pale light and fluffy – a handheld
electric mixer is ideal for this. Now gradually fold in the flour
by stirring lifting and with the side of a metal spoon cutting through
the mixture, then mix in the honey and chocolate chips.
Divide the mixture into about twenty, shape into rounds, flatten
slightly and then place on the prepared baking sheet. Bake for about
20 to 25 minutes or until golden.
