Pasta-mixa Recipe


1½ lbs of tomatoes 1 onion
1 tablespoon olive oil
1 crushed garlic clove
1 teaspoon of chopped parsley
1 teaspoon of chopped basil
1 teaspoon of tomato puree 200g of pasta (cooked)
The sauce
Salt and pepper to season.

First soak the tomatoes in boiling water for a couple of minutes to loosen the skins, drain and peel.
Chop the tomatoes into small pieces. Warm the oil in a saucepan and add the onion and garlic, cook until soft without browning.

Add the chopped tomatoes, parsley, basil, tomato puree and seasoning. Stir everything together and simmer gently for about 30 minutes stirring frequently.

Now pour over the cooked and drained pasta, stir to coat the pasta with the sauce. Serve.
Serve with a little parmesan cheese if liked.
