Herb Omelet
2 teaspoons of mixed herbs (fresh or dried)
2 eggs
About 1½ tablespoons or ¾oz butter
Salt and pepper to season

An omelet pan, skillet or fry pan with a 6 inch diameter base
First break two eggs into a bowl, then whisk and season with salt
and pepper. Now chop the herbs and add these and half the butter,
cut into small pieces, to the eggs.
Next, put the empty pan on the heat - so that when the butter’s
added it starts to melt - then put the rest of the butter into the
pan and tilt the pan so that the butter melts and coats the sides
and base.
When the butter starts to foam pour in the eggs, stir with a fork
and shake the pan frequently until the omelet begins to set, then
leave undisturbed until just about set.
Now using a rubber spatula loosen the omelet from the edge of the
pan, fold it in two or three and turn it onto a warm plate before
serving. Serve.
